Asparagus Chutney

We don't really see this spears in India.
It has got great nutritional values and fits itself into the low-calorie or negative calorie vegetables. 100gm of asparagus spears have 2.2g of protein, 2.1g of dietary fiber, give only 20 calories and burn more calories to digest.
In addition, the shoots have good levels of dietary fiber. Dietary fiber helps control constipation conditions, decrease bad, "LDL" cholesterol levels by binding to it in the intestines, and regulates blood sugar levels.

It tastes great cooked, grilled or baked.
Just add some olive oil. sprinkle a pinch of salt and freshly ground black pepper all over the spears, through them on the grill and leave them there until you see the grill marks on them. Can even bake them with the same olive oil, salt and pepper. Either way it tastes great.
Another recipe I recently tried with this one of the oldest recorded vegetable that ancient Greeks and Romans prized as delicacy is the Indian style chutney.

Ingredients;
Asparagus spears : 7 to 8.
Green chillies: 4 to 5.
Salt to taste
Oil: 3 spoons
Cumin seeds: 1 spoon
mustard seeds: half spoon
urad dal: half spoon
Garlic cloves 2 or 3
Tamarind: size of 2 garlic cloves

Preparation:
1. Firstly slit the green chillies and fry them in one spoon of oil.
2. Grind the along with half spoon of cumin seeds and 2 cloves of garlic. Shift this into a bowl.
3. Chop the spears into 1 inch pieces. Cut the ends if they are too hard.
4. Put 1 spoon of oil in a pan and cook these spears along with some salt and tamarind.
5. Let it cool down and then grind it to fine paste. No need to add water.
6. Add this chutney to the paste in step 2.
7. Heat oil in a pan for tempering. Once the oil is hot, add cumin seeds, mustard seeds, urad dal and curry leaves. Fry them until nice aroma comes out.
8. Add the tempering to the chutney.

Serve with rice.
Tastes great.
Worth giving it a try.
